Hidden Valley is the culmination of years of determined patience. Dave Hidden, a winemaker by training, but entrepreneur by nature, has realized his dream. This secluded farm nestled against the Stellenbosch mountains, now boasts a magnificent new cellar amongst its pristine vineyards. The parcel of land was pointed out to Dave in the late seventies by Dave’s Viticultural Professor, he remarked that this was amongst the best vineyard land in South Africa. Dave took heed of this and acquired the property in 1998.
After careful consideration and in keeping with a holistic approach to the environment, the farm was developed to its current glory. Although the winery is a state of the art, gravity fed cellar, it is nestled into side the slope and intended to blend back into the environment in time. The buamilding materials, namely stone, wood and glass are purposely selected to present a contemporary yet functional structure. The cellar is surrounded by vineyards, olive groves, almond orchards and natural vegetation, each occupying an integral part of the farms’ ecosystem. Stainable agriculture is a common theme in every approach both in and outside the cellar.
The philosophy on the farm is "Working With Nature". We ensure that whatever we do on the farm we always are sensitive to the indicators that nature has for and to be aware of her into our plans. “We only have brief custody of this land and when I hand it on to whoever and whenever I want to ensure that the farm is more eco-valuable than when I purchased it ” says Dave.
The Hidden Valley brand is not just about Dave Hidden. It is irrelevant who owns the property. What is relevant is what the team he entrusts to carry out the vision, does with it.

Wedding / Function Venue
Hidden Valley Wines is a holistic lifestyle brand, catering for all venue-related aspects for the big day. The estate is positioned atop the slopes of the Helderberg, with panoramic views of vineyards and mountains. Photographic opportunities are many, including a spectacular indigenous garden trail, a tree-flanked dam, vineyards and olive groves, a gorgeous barrel cellar, a unique hand-hewn stone wall, and sweeping views from the tasting room.
The menu for the day is created by award-winning master chef Bertus Basson, and prepared in the Overture restaurant; an Eat Out Top Ten winner and one of only five American Express Platinum-rated restaurants. Bertus specialises in fresh, creative gourmet fare that he makes from fresh local produce wherever possible.
